and then use the other one for cured duck breast. i had some of that in my home town, it was amazing, literally world class, couldn't believe such a thing was produced there. gary linked a recipe for something like that a while ago, so i'll make it and see what happens
then the legs i'll make in the oven with some meme pasta my uncle had tried over the holidays. ever hear of orzo? looks just like rice but it's supposed to be really amazing so i guess i'll try it.
