Flip flop hubs work by having one sprocket on each side of the hub. Or more typical on fixed sprocket and one freewheel. You change between the two by removing the entire wheel and flipping it around. You tension the chain by moving the wheel back in the dropouts.
Climbing in a fixed gear is pretty fun, like anon said, if you have a suitably low gear. Descending is not so fun. I'd recomend gears if you live in a very hilly place.
