Obsessing over process and difficulty are antithetical to enjoying nature. The point of primitivism and retro-hipster gearfagging is to remove insulation between yourself and the world around you. It costing convenience is secondary.
In a video game, you should be looking for those with fully fleshed ecosystems in their environment. World's designed with full food chains and plant life arrangement that places realism first, then makes adjustment for playability.
Basically, play Monster Hunter.
If you're too much a fucking woman, I hear MGS Snake Walker is pinnacle. Other games with incidentally full innawoods play include AC:Origins and GTA5. (I'd presume Red Dead is also good for this purpose, but don't like Western movies enough to want to play.)
