It can be enjoyable to watch the animals and see how they behave. Even common animals like ducks have lots of interesting behaviors which aren't immediately visible.
I recommend slowing down and looking at micro-nature, eg look at plants, admire their growth structures, and the ecosystem around them. Ants climbing up the flower, getting eaten by a bird, etc.
It could also be that you're dopamine-flooded and can't appreciate the natural environment as a result of feeling understimulated. If you want to try enjoying the outdoors look up "dopamine detox".
Anyways, maybe it's just not for you too. I have a hard time sitting still, but ultimately I think it's good for me.
