It's nice fresh, but try bottling it with orange peel, raisins and some cloves. Then leave it in the basement for a month or two. Fermented birch sap tastes very weird, but I like it a lot. To get an idea what heavily fermented sap tastes like, put some fresh sap in a jar on a windowsill where it will be warm for 3 days and see if you like the more acidic flavour.
