We're not supposed to bath daily, because by doing so, we're removing along with the dirt, natural oils and local bacteria that, at one hand, keep the skin flexible and soft, and at the other hand, keep at bay harmful bacteria and virus who are not supposed to be there.
So, if by removing both, the skin becomes vulnerable. Usually that isn't a problem, unless your soap is too strong, which is probably your case. The itchy could be either your soap messing with your skin, being too aggressive and hurting the upper layer of the skin. Or probably, the shower literally dries your skin to the point it have micro-cracks or something like that.
